Periyar Tapioca Dry Slices
Kappa - one every malayalis miss back home. Organically grown tapioca (kappa), cleaned cut boiled and dried. Cooking Tips: Kappa (Dry Tapioca) Wash the kappa pieces well and soak them overnight in enough water. Break the tapioca to small pieces by your hand. Cook the tapioca pieces in a pressure cooker for 2-3 whistles adding enough water. Drain the water and keep it. Now in a mixer add grated coconut, green chili, garlic, and turmeric and curry leaves. Pulse it 2 times in the mixer. Add this mixture to tapioca with salt and curry leaves. Heat it for few minutes in low flame. Now Mix well and mash the tapioca. Eat it with Fish curry or Meat Curry.
